Grilled Za’atar Pork Loin from Zestuous

One of the best ways to take a food journey is to travel the spice aisle in your local grocery. I’ve been so impressed with the ethnic selections in recent years, especially at Whole Foods.

You no longer have to buy a big jar of something you might only use once. Whole Foods sells small ½-ounce boxes of spices, so you can sample them without breaking the bank.

My latest spice experiment was with zaatar. It’s a Middle Eastern combination of toasted sesame seeds, thyme, sumac, marjoram, savory and salt. Its offers tones of nuttiness along with a bright freshness.

I combined it with mayonnaise, smoked paprika and garlic powder and rubbed it on a pork loin. Then, I grilled it up to create a nice char.

In about 20 minutes, it was perfectly juicy and crusted with flavor.

You’ll probably have a little zaatar leftover. No worries. It’s great sprinkled on pita bread with a little olive oil.

Grilled Zaatar Pork Loin

This grilled zaatar pork loin seasoned with Middle Eastern spices was cooked in just over 20 minutes. Perfectly moist crusted with flavor.
Prep Time: 5 minutes
Cook Time: 21 minutes
Total Time: 26 minutes
Servings: 4

Ingredients 

  • 1 pork tenderloin
  • 1/3 cup mayonnaise
  • 1 tsp zaatar
  • ¼ tsp garlic powder
  • ¼ tsp smoked paprika
  • ¼ tsp salt

Instructions 

  • Combine the mayonnaise and spices in a bowl.

  • Smear the mayo mixture over the pork loin.

  • Heat the grill to high. Place the pork loin on the grill and close the grill. Grill for 7 minutes.

  • Turn the loin over. Reclose the grill, and grill for another 7 minutes. Turn the grill off, and leave the loin in the grill with the lid closed for 5-7 minutes, until the internal temperature of the meat reaches 145 degrees F.

  • Slice and serve.
