This is one of those holiday treats that I am ordered to make every year. In fact, they’re so good, when my box of holiday treats is delivered, some family members run to the box to grab out as many of these as they can.
Not a bad result, considering the recipe has only 3 ingredients: chocolate, peanut butter and Ritz crackers. Everyone knows chocolate and peanut butter go well together, but the Ritz add a surprising buttery, salty crunch.
I’ve included a basic recipe below, but I have to admit, I never measure my ingredients. I just buy a box of crackers, a jar of peanut butter and some melting chocolate. You may end up with a little extra of one of the ingredients, but I’m sure you can find use for extra chocolate or peanut butter.
As for the chocolate, sometimes I use chocolate chips and sometimes I use the bark. It turns out fine either way. I’ve used Belgian dark chocolate before, but I’ve found that my family prefers milk chocolate with these treats.
To make them extra special, wrap them in cellophane and tie them with a bow. Then, tuck them into your beautiful treat boxes and wow your friends and family.
Chocolate Covered Peanut Butter Crisps
Ingredients
- 1 15- oz box Ritz crackers
- 1 18- oz. jar Jif creamy peanut butter
- 1 24- oz block chocolate bark
Instructions
- Line a baking sheet with wax paper. Place Ritz crackers along pan.
- Spread one side of half the crackers with peanut butter.
- Add another cracker on top to make a sandwich.
- Place 1 cup water in a sauce pot; add a double broiler or stainless steel pan on top, and bring the water to a simmer.
- Place the chocolate in the double broiler and allow it to slowly melt.
- Using tongs, dip the sandwiches (one at a time) into the chocolate, until coated on all sides. Place the chocolate covered sandwich back on the baking sheet.
- Once the baking sheet is full, place it in the freezer or fridge, until the chocolate has hardened.
- Wrap each treat in cellophane and tie with a bow.
