Before I get to the recipe for this easy, versatile breakfast, I have a few thank yous that are very overdue.
Friday, my husband and I celebrated our 16th wedding anniversary. It was a special night at home with his favorite meal ~ grilled rib eyes, corn on the cob and sticky rice.
It was nice to be able to celebrate together. There have been times in his Army career that we haven’t been so lucky because of assignments and deployments. So when we can be together, we cherish the time alone at home with our puppies.
Recently, some amazing bloggers have recognized Zestuous with some special blog awards, and one reminded me of my first date with my husband. We were talking for hours, and then all of a sudden, he threw it out there, “Ich liebe dich.”
Totally shocked, I asked, “What did you just say?” He repeated himself in more of a whisper, realizing I might actually know what he said. He was slightly embarrassed when I told him that I had had four years of German.
For those of you who don’t speak German, Ich liebe dich means I love you. We just laughed. He was trying to be charming by speaking to me in a foreign language ~ although German is not the most beautiful language he could have chosen, it was still very sweet.
When Ann over at Sumptuous Spoonfuls awarded me the Liebster Award, I immediately thought of that embarrassing, sweet memory. The Liebster Award is passed on from blogger to blogger to express their dear love for one another.
Although Ann and I have never met, we have a special connection. I always look forward to seeing her posts and facebook updates every morning when I wake up and every night before bed. When I see her profile pic of a big scoop of ice cream on that delectable rhubarb crisp, I know that she has something sumptuous to share.
The other award I recently received was the Versatile Blogger Award. Both A Healthy Jalapeno and Crumbs in My Mustachio presented me with this honor. This is a fun award because you get to learn neat things about these versatile bloggers. I had no idea Laura Jeanne has a boyfriend in the Army who has fought overseas for two years. A big special thank you to her and her Soldier. And Amy made me laugh. She loves crushed ice because she hates when ice cubes hit her in the nose. LOL. I’ve so had that happen. A big special thank you to Laura Jeanne and Amy.

- I’m a food blogger at night and on weekends, but during the day I publish a newspaper, run a TV and radio station and manage a social media presence for the United States Army at Fort Hood, Texas.
- I have a black belt in Tae Kwon Do.
- My favorite color is orange ~ I have even had two orange cars.
- I’ve lived in 9 states and 3 countries.
- I have flown in a hot air balloon twice.

Daniel is a new blogger I follow. He shares French Canadian recipes that remind me of my travels in Europe. Recently he shared his recipe for Tarte de Pommes a la Normande…some of my fondest memories of Europe were at the 65th anniversary of D-Day in Normandy. And I drool over his lemon squares.

Christi’s blog is so fun to follow. Her creativity is never-ending. From donut pops to stuffed Rice Krispy treats, she satisfies my sweet tooth every day.

These six cousins from Boston share all sorts of recipes and tips. So many times I see their ideas and shout out “Shut the front door!” Their pilgrim hat cookies and chocolate peanut butter acorns are so cute for the fall.

Stephanie just got married yesterday! So the Liebster Award is definitely appropriate, but she’s so versatile, too. She’s been juggling a wedding, marathon running and making beautiful food.

There is no greater love than that of Ally. She takes time out of her day to make us all feel special. She shares our recipes, posts her own beautiful recipes and still finds time to wish us all a good night.

Dawn was one of my inspirations to start a food blog. Although we’ve never met, we both used to conduct public affairs for the Army in Belgium. When she left Belgium as an Army wife, she started her new career in food. I came to Belgium a few years later and learned about her blog. She gave me that kick start to launch Zestuous.

My husband is half Filipino, so I love to stop by Ray’s site to learn more about this cuisine. His photos are so vibrant, and his recipes give me the courage to try something new.
I’ve fixed a little breakfast for all of these bloggers ~ an Ich Liebe Dich Versatile Frittata. I love frittatas on the weekend. They are so easy and versatile. You just cook up some leftovers, add in eggs and sprinkle with cheese.
I had some rib eye leftover from my anniversary dinner and some kale leftover from the Zestuous Challenge. I threw in some onion and bell pepper and breakfast was ready. Bon appétit! Ich liebe dich!
Ich Liebe Dich Versatile Frittata
Ingredients
- 1 slice bacon chopped
- 1 tablespoon onion diced
- ¼ to ½ cup leftover vegetables
- ½ cup leftover meat
- 3 eggs
- 2 tablespoons milk
- 1 tsp. Mrs. Dash
- ¼ cup shredded cheese
Instructions
- Brown the bacon in a small skillet.
- Add the onion and vegetables and sauté until tender. This morning, I used kale and bell pepper. Asparagus and mushrooms are really great in this, too.
- Add the meat from dinner and brown. Steak, chicken or pork work great.
- Whisk the eggs with the milk and Mrs. Dash. Pour into the skillet. Cook for about 5 minutes, until the edges begin to cook. Sprinkle with cheese.
- Place in a 400 degree oven for 5 minutes, or until the eggs are cooked through. Serve with salsa or sriracha sauce.

This sounds so wonderful, and basically quick. My husband is diabetic and I am a weight watcher, and I know I can make this so it will follow both of our diets. By the way, your Grandmother Arlene is my very best friend in the world. I also enjoyed the blog about the bread board that she sent to you. I will continue to follow you- I have nothing but cookbooks in my home, and have always loved to cook and now I bake sugar-free, and egg-free. using eggbeaters.
