Indulge in ube stuffed french toast using limited edition King’s Hawaiian rolls. A delicious twist on a breakfast favorite!

King’s Hawaiian released ube coconut rolls, a limited edition version of their famous sweet rolls. When they launched them online, they sold out in 10 minutes. I was lucky enough to be one of the buyers who got an order in on time.
The rolls contain ube flavor and coconut milk, which makes them light purple and extra sweet.
Since these rolls are hard to get, you can also make this recipe with regular King’s Hawaiian rolls, too.
What I love about this recipe is that you don’t need a skillet. Everything bakes up beautifully in a baking dish.

What is ube
Ube is a purple yam native to the Philippines. It’s used in all sorts of Filipino recipes like cakes, ice cream and waffles. What makes it so fun is its vibrant purple color.
People often mistake ube with purple sweet potatoes, but they’re not the same thing. Ube has a sweeter, nuttier taste and when cooked is much creamier.

Ube Stuffed French Toast
Ingredients
- 1/2 cup ube jam
- 1 tbsp milk
- 10 King's Hawaiian Ube Coconut Rolls, or regular sweet rolls
- 2 eggs
- 1/4 cup granulated sugar
- 3/4 cup sweetened shredded coconut
- 1 tbsp butter
Instructions
- Heat Oven: Heat your oven to 400F degrees
- Make Filling: In a medium bowl, stir together the ube and milk. Place in a piping bag with a large round tip.
- Egg Wash: Beat two eggs in a bowl. Dip each roll in the egg wash to coat.
- Coating: Combine 1/4 cup sugar and 3/4 cup coconut in another bowl. Dip the roll in the coconut to coat on all sides.
- Melt: Place butter in a 7×10 pan. Place the pan in a 400F-degree oven to melt. Remove the pan from the oven.
- Fill: Place the coconut-coated rolls on their sides in the pan of butter. Poke your finger in the side of each roll. Then, pipe ube filling into each hole.
- Bake: Bake uncovered for 10 minutes.

- Ube Jam: Also called purple yam jam or halayang ube. It’s cooked yam with sugar, buttermilk, salt and sometimes coconut milk. You can find it at Asian markets or online.
- Whole Milk or Coconut Milk: This is used to thin the jam.
- Eggs
- Granulated Sugar
- Sweetened Coconut
- Butter
Substitutions: If you can’t get the ube coconut rolls, use regular King’s Hawaiian rolls.

How to make ube stuffed french toast
- Heat Oven: Heat your oven to 400F degrees.
- Make Filling: In a small bowl, whisk together the ube jam and milk to thin it slightly. Transfer it to a piping bag with a round tip.
- Egg Wash: Beat two eggs in a bowl.
- Coconut: Place the sugar and coconut in a small bowl and stir to combine.
- Melt Butter: Place the butter in a 7×10 casserole dish. Place it in the oven to melt.

- Dredge: Dip each roll in the egg wash and coat on all sides. Then, dip it in the coconut. Place it in the baking dish on top of the melted butter. Be sure to place it on it’s side. Repeat with all of the rolls.


- Make Hole: Use your finger or the end of a spatula to poke a hole into the side of each roll.

- Fill: Pipe the ube filling into each roll where you made the hole.
- Bake: Bake in the preheated oven for 10 minutes. The rolls should be golden brown.


How to serve ube stuffed french toast
Transfer the baking dish to the table and serve by removing the rolls from the pan. This dish is sweet enough you don’t need extra syrup.

Storage
Store leftovers in an airtight container in the refrigerator for 3-4 days. They can be enjoyed cold or reheated in the microwave or air fryer. You can also freeze them for up to six months.
