One-Pot Chicken Noodle Soup

This homemade chicken noodle soup recipe is the ultimate comfort food, perfect for cold nights.

Ingredients

  • 2 tbls butter
  • 1/3 cup onion diced
  • 1/3 cup celery diced
  • 1/3 cup crimini mushrooms diced
  • 1 chicken breast chopped
  • 32 oz chicken broth
  • 6 oz egg noodles
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp herbes de Provence optional

Instructions

  • Sauté: Melt the butter in a large pot over medium-high heat. Add the veggies and sauté for 5 minutes.
  • Cook: Add the chicken and cook it for 5 minutes.
  • Boil: Add the broth and bring to a boil. Add the noodles and seasoning and cook for 15 minutes, or until the noodles are al dente.
  • Simmer: Reduce heat to low, until ready to serve.

Notes

If using pre-cooked chicken, add the chicken, but don't sauté for 5 minutes. Just move on to step three.
If using fresh pasta, boil the chicken for 10 minutes. Then, add the fresh pasta and boil for 3-4 more minutes.
