Chopped Mango Kale Salad

Ingredients

  • 8 cups chopped kale
  • 2 mangoes chopped
  • ¼ cup diced red onion
  • 2 green onions sliced
  • 1/3 cup toasted pine nuts or shelled sunflower seeds
  • ¼ cup olive oil
  • 2 tablespoons honey
  • 3 tablespoons red wine vinegar
  • ½ tsp. kosher salt
  • ¼ tsp. course ground black pepper

Instructions

  • In a large bowl, combine the kale, mango, onions, and nuts or seeds.
  • In a small bowl, whisk together the olive oil, honey, vinegar, salt and pepper.
  • Pour over the kale and toss. Cover and refrigerate until ready to serve. Can be made up to two days in advance.
