Don’t let the name or color of this ice cream fool you. Avocado ice cream is a creamy ice cream with tons of healthy fats and a slight tropical flavor from the coconut. 

Avocado isn’t actually a vegetable. It’s a fruit and probably one of the most naturally creamy fruits we have. Straight from the skin, you can scoop out a bite of avocado, and it melts on your tongue. Now, imagine that consistency frozen.

And avocados don’t have much flavor. When prepared as guacamole or on a turkey-bacon-avocado sandwich, avocados graciously pick up the flavors around it. The same is true if you mix it with something sweet.

So, I challenge you to be adventurous today. Try making this dairy-free dessert at home with only a few simple ingredients. It’s a rich, classy ending to any culture’s barbecue, even if you’re not a fan of avocados.

Avocado Ice Cream

Don’t let the name or color of this ice cream fool you, Avocado is one of the creamiest summer treats you’ll ever taste.

Ingredients 

  • 3 avocados
  • 1 can Cream of Coconut
  • 1 tsp lime juice
  • 2 tsp honey
  • pinch salt

Instructions 

  • Pulse: Pulse all ingredients together in a food processor, until smooth. Taste and add more honey or lime juice, as needed to balance out the flavors to your preference.
  • Scoop: Scoop into a freezer-safe tub with a lid and freeze, until firm. For a faster ice cream, you can place the smooth ingredients into an ice cream maker.
  • Remove: Before serving, remove from the freezer, so it is soft enough to scoop. (At a barbecue, this is usually never a problem)
  • Serve: For a fancy presentation, serve in a scooped-out avocado skin and garnish with toasted coconut.

Ingredients for avocado ice cream

  • Avocados: These green wonders bring a creamy texture and their unique flavor to the ice cream party.
  • Cream of Coconut: Adds a sweet coconut vibe, making our ice cream wonderfully creamy. It can either be found in the Latin aisle or the adult beverage aisle because it’s also used for pina coladas. 
  • Lime Juice: Throws in a dash of citrus zing to balance the sweetness and keep things fresh.
  • Honey: A natural sweetener, making our treat sweet and delightful.
  • Pinch of Salt

Substitutions:  Instead of cream of coconut, you can use unsweetened coconut cream or full fat coconut milk and add your own sweetener. If you don’t like coconut, you can use a can of sweetened condensed milk or heavy cream. Or, if you prefer to go all-natural, use a combination of milk and add more honey to taste. Instead of honey, you can use pure maple syrup for a different flavor profile. Finally, if you don’t have lime juice, lemon juice will work just fine.

What variations can I make with this recipe?

You can add chocolate chips, cocoa powder, vanilla extract or peppermint extract to this recipe. I recommend omitting the lime juice if adding flavors. I also recommend swapping the cream of coconut for a less fruity milk option like sweetened condensed milk or heavy cream to avoid clashing with the other flavors. 

Can I make vegan ice cream with this recipe?

Yes. Simply omit the honey, as honey is not vegan. Use another vegan sweetener instead.

What does avocado ice cream taste like?

You can barely taste the avocado flavor at all. You mostly taste the honey and lime juice, and the avocado just provides a creamy, smooth texture.
